The server is already updated; new versions of Minecraft are always supported before updates are released.
Given that you are on a Nintendo Switch, the most likely reason you are unable to connect is that you have modified your device’s DNS settings to allow you to join non-featured Minecraft servers. We often find players running into this when a new version of Minecraft is released.
Reverting these changes should fix the problem and allow you to join again.
